The Pistachio Baklava made at Elmacı Pazarı Güllüoğlu, where baklava has become the Antep Baklava through years of hard work, is the very same Antep Baklava with Geographical Indication Registration. It is also the first Turkish product registered by the EU. Made with seasonally harvested "Boz İç Antep Pistachios" and Şanlıurfa's clarified butter, kneaded with the finest craftsmanship using durum wheat flour, the dough is rolled out thinly to create its crispy texture, baked in a stone oven, and sweetened with real sugar; here it is, the most famous product of Gaziantep, whose name is synonymous with Gaziantep.
Early harvest, first quality pistachios, also known as "Gray" (bird droppings) pistachios.
